Our Weekend

Happy Hump Day, y'all.  And Happy Spring Break!

I'm looking forward to catching up with a couple teacher friends this week.

We had a nice weekend!  Kicked it off with Publix subs and Dateline on Friday night.  Well Dateline for me, K doesn't like Crime tv.  Anyway, we took it easy because we had a busy day on Saturday getting ready for a little fiesta with our Supper club.  I made margaritas (planning to share the recipe soon) and stuffed jalapenos for the grill.  I stuffed with sausage/cream cheese mix.  So good!  I bought the pepper stand to try out and it was a total fail.  

Speaking of FAIL...the main event of our night was trying out a Breakout Room for the first time.  

Much different than I expected.  I was thinking scavenger hunt, with clues and riddles but it wasn't really like that.  It was tough, and we didn't "break out".  I'll just blame the margaritas...

It was fun though!  We fulfilled our Ocean's Eleven fantasies.

On Sunday we picked up EB from my parents' house and went to lunch at Hometeam.  

It was a gorgeous day so we had a family trip to the park around the corner from our house.  It was our first time going and they just put in a really nice playground!  She loved it!

Our Weekend

We had a good one!  I am suffering from some major seasonal allergies, so that put a bit of a damper on things, but it was still a nice Spring weekend.

On Friday night we went up to Charles Towne Fermentory.  I've mentioned this place several times and we love it because we can bring the babe and yet it feels like a date night at the same time.  Proud of her new trick: sucking on her bottom lip:

On Saturday my mom and I took EB up to the Flowertowne Festival bright and early.  We arrived right when it opened and it was already so packed...crazy!  We spent some time shopping at the sweetest little children's boutique up there called The Carousel.  

On the way home we swung by the Neighborhood's Little Free Library to exchange a book:

 And later that night we grilled out.

Sunday was Lauren's Baby Shower!

Absolutely CAN NOT wait to meet Miss Mac.

We had delicious food and EB had lots of little friends to play with... 

Such sweetness.

Chicken Cordon Bleu Pasta

This weekend ended up being a bit of a bummer, as my husband came down with a gnarly cold.  Me and EB did some Easter Bunny shopping on Saturday and then spent most of Sunday over at my parents' house, sitting outside enjoying the Spring weather.  Thankfully K is starting to feel better!  

I made this Chicken Cordon Bleu pasta on Sunday night for dinner.  Saturday mornings I can usually catch some of the Pioneer Woman while EB naps, and that is where I initially saw the recipe. I'm sure we will have leftover Easter ham in a few weeks and I plan to make this again then.

I made some changes to the initial recipe, so I thought I would share it below.  

Ingredients

1 cup cubed ham

2 cups cubed chicken breast

3 cups cooked pasta

2  cups cooked peas

3 cups shredded swiss cheese

2 cups milk

1 cup chicken broth

4 tablespoons butter

flour

breadcrumbs

cayenne pepper

The only real cooking involved is making your cheese sauce, which starts with making a roux with 3 tablespoons butter and flour.  From there you add the milk and chicken broth, bring to a light boil, and add in 2 cups of the swiss cheese and a dash or two of cayenne.  

Once the cheese sauce is prepared you simply combine it with the ham, chicken, pasta, and peas.

Put it in a greased 13x9 casserole dish and sprinkle with the remaining swiss.

Melt the last tablespoon of butter and mix with enough breadcrumbs to sprinkle over the whole dish.

Bake at 375 for 30 minutes.
