The Weekend

This weekend we spent Saturday at the pool.  There are ups and downs to condo-living, having a pool is definitely an UP.  It also doesn't hurt that our pool never seems to be crowded.  We had it to ourselves from 11-2!
The best part of the weekend was Saturday night, K suprised me with reservations at FIG!!!
I was so excited...


I had the grouper and oh my, it was amazing!!
After a nightcap around the corner at Mercato,
I woke up on Sunday with quite the headache.  It was a lazy day, loving on Alfie and grilling flank steak for dinner.
I'm reeeally not ready for this to be Monday!

"Cheese and Crackers" Chicken

This is a great weeknight recipe that turns out tasty everytime, and pairs well with just about any side.

You need:
Chicken
Milk
Cheese of your choice (I'm using sharp cheddar)
A sleeve of Ritz

You want to crush the crackers into chunky breadcrumbs.  I used my blender, but a food processor would prob be best.  I like to grate my own cheese, but you can use the bagged kind just as well.

It's very simple.  You dip chicken in milk, then in cheese, then in crackers.  You want to really push the cheese and crackers into the chicken, and then poor the remaining over the chicken in your greased pan.  Bake, covered, at 400' for about 30 min, then remove foil for 5 additional minutes.  Done! And delicious!
I don't have a final photo but just imagine the cheese gets brown and everything is buttery from the Ritz.  I didn't say this was healthy!

Cookie (&Brownie) Monster

I just quickly wanted to share a yummy treat that I'll make from time to time.  
You need a brownie mix and some cookie dough.  Put your brownie mix at the bottom of a greased pan.  Drop spoonfulls of cookie dough on top.  Bake it up!  I'll heat at 350' and use the toothpick method to check if they're done.

Reggae Nights

Saturday night we hit this new spot on JI called Chas Chas Tequila Bar, Smokey Oak's new sister.  I'm going to give them another shot before I review for you.  They had only been open 3 days.
Then it was Reggae Nights at James Island County Park.  It was fun, but also very poorly lit and crowded with some crazies-not a good combo. 
I had to snap a pic of the boy in the jumbo chair.  I wonder how annoying it is to carry.

Here I am with friends Ashley and Kristina.  Ashley recently had a sweet baby girl named Ansley, I'm so happy for her.  And I was happy she was able to make it out for a girls night!

Impromptu Fish Fry

Saturday K and I decided to have our first fish fry!  We invited over some family and had a ball!  I made homemade peach ice-cream which I didn't get a photo of, but here's the rest...
We bought 2 lbs of catfish filets and opted to cut them into nuggets so that they may go farther, and fit better in my baby fryer.  We dipped them in egg and then in a creole batter. 


With hushpuppies (note: add a dash of sugar to the mix, as with cornbread), pasta salad, baked beans, you've got a genuine southern fish fry.

Insulated Tote

After starting the day with Body Combat and Bagel Nation, I ventured downtown to "Oops" to pick up an insulated lunch tote that I saw earlier in the week but didn't buy and then regretted blah blah blah.  It's so busy downtown y'all!   Monday there were racks upon racks of these bags and this morning- one left. Uno!  You bet I snatched it up, remarking multiple times to the sales girl "Wow, I can't believe they're all gone".  But, at $10 a pop, I guess I can believe it.  It's funny because a couple of months ago I couldn't go shopping anywhere without seeing displays of these hanging around and now I can't seem to find. 
Summer afternoons are meant for strolls to the pool and the thing is, I don't want to lug our jumbo cooler on wheels with just a couple of beers inside.  So, to make a long story short, I wanted an insulated tote bag and I got me one!

The Weekend

This weekend was the Spin-a-thon at Gold's!  We spun outside for two hours and it felt great!!  It was for a great cause also.  Win Win! 

Saturday night was my Nana's 80th Birthday!!  I gave the toast on behalf of the grandchildren and it was a wonderful night of family and fun...



Sunday I made lite french toast and turkey sausage for breakfast. 
I painted my nails with Revlon "Peachy" and I am loving this color!

 We ended the weekend with a cocktail on the terrace at Basil Mt. Pleasant.  Did you see the full moon?
